I visited a slaughter place in an area further away from the town where I live.
I had an appointment to visit at 8AM.
When I arrived there at 8am, most of meat had been slaughtered and hung.
The animals slaughtered that day were goats and cattle.
Most of them were goats.
I imagined the place where people were working, wearing white sanitary clothing, gloves and masks before I went there.
On the day, the people working were wearing T-shirts and sandals.
They worked with bare hands.
The sense of hygiene was totally different from Japan.
They were used to doing their tasks, so the work was very efficient.
The work went on next to next.
I was watching a cow being cut up.
A man was neatly peeling off entrails of a huge cow by hand.
He was pouring a bucket of water into the belly of the cow strongly.
And he washed the blood with water and scooped the water out by hand.
How tough he was!
A man was slaughtering a goat. He cut the body and put his mouth directly and blew air into it. I was overwhelmed by the idea of "Blowing directly with his mouth".
Senegalese are laid-back people basically, but the people here were working quickly and efficiently. I was impressed with their works.
I was always wondered how smell of slaughter places were.
The smell in the slaughterhouse was not that strong, and it was not at a level that would bother me.
When I was out from the entrance, the smell became stronger.
There were dead animals lying on the ground and piles of bones of animals that had been slaughtered. The smell combined with the heat, gave off strong smell.
This scene expressed that slaughtering in the heat of Senegal had difficulties to work.
It was very valuable to be able to see the previous process of the meat hanging in butcher's shops in town.
I am grateful to both the people who are related to slaughtering and the animals being slaughtered.
私の住む町からさらに奥地のセネガルの地域で、とさつ（屠殺）場を見学しました。
私は朝8時に見学の約束をしていました。
8時にとさつ場に着いた時は、ほとんどの肉がさばかれていて、吊るされている状態でした。
この日さばかれていた動物は、ヤギと牛でした。
ほとんどがヤギでした。
私は、とさつ場とは、白い衛生服を着た、手袋とマスクをつけた人たちが作業している場所を想像をしていました。
この日、作業している人たちの格好は、Tシャツにサンダルでした。
さらに言えば、素手での作業でした。
衛生面に関する感覚が大きく日本と違いました。
作業にとても馴れている様子で速かったです。どんどん作業を進めていきました。
牛をさばくのを見ていたときのことです。
巨大な牛の内臓をきれいに手ではがしていました。
内臓がなくなった牛の腹にバケツの水をバシャーと勢いよく流して注ぎ込みました。
そして、血をその水でバシャバシャと洗い、赤くなった水を今度は手ですくって出しました。
たくましいこと！
ヤギをさばく人は、ヤギの体を切った部分に直接口をあてて息をふきこむ作業をしていました。「直接口で」息を吹き込むこととに圧倒されました。
のんびり気質のセネガル人ですが、ここで働く人たちは、テキパキ動いていました。
見ていて気持ちよかったです。
とさつ場のにおいはどうなっているか前から気になっていました。
さばいている場所は、においはそこまできつくなく、気になるレベルではありませんでした。
においのきつさを感じたのは、とさつ場の入り口のすぐ外でした。
そこには、死んだ動物がそのまま横たわっていたり、今までさばいた動物の骨が山になっていたりして、暑さと合わさってにおいを発していました。
その光景はこの暑いセネガルでの肉の処理の大変さを物語っていました。
町でよく見かける肉屋に吊り下げられている肉の、その前段階を見ることができたのは、とても貴重でした。
さばく人、さばかれる動物、どちらにも感謝です。
